1 lb ground turkey

2 large sweet potatoes, peeled and diced

1 cup chopped onion

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheddar cheese

2 tablespoons olive oil

1 tablespoon fresh cilantro, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Sweet Potatoes: In a large pot, bring salted water to a boil. Add diced sweet potatoes and cook until fork-tender, about 10-12 minutes. Drain and set aside.

      Brown the Turkey: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent (about 2-3 minutes). Add the ground turkey, cooking until browned and fully cooked (about 6-8 minutes). Season with smoked paprika, cumin, salt, and pepper.

        Combine Ingredients: In the skillet with the turkey mixture, stir in the black beans, corn, and diced tomatoes. Once well combined, remove from heat.

          Layer the Casserole: In a large baking dish, spread half of the cooked sweet potatoes evenly at the bottom. Layer the turkey mixture over the sweet potatoes, followed by the remaining sweet potatoes on top.

            Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top layer of sweet potatoes.
