1 lb ground turkey

2 medium sweet potatoes, diced into small cubes

1 medium onion, chopped

2 garlic cloves, minced

1 red bell pepper, diced

1 cup corn (fresh or frozen)

1 teaspoon olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or parsley for garnish

1 avocado, sliced (for serving)

Optional: hot sauce for serving

Prepare the Sweet Potatoes: In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes and cook for about 10-12 minutes, stirring occasionally, until they are tender and lightly browned.

    Add Aromatics: To the skillet, add the chopped onion and minced garlic. Sauté for an additional 3-4 minutes until the onion becomes translucent and fragrant.

      Cook the Turkey: Push the sweet potatoes and onion mixture to one side of the skillet. Add the ground turkey to the empty side and cook, breaking it apart with a spatula, until it’s no longer pink, about 5-7 minutes.

        Combine Ingredients: Stir in the diced red bell pepper, corn, chili powder, smoked paprika, cumin, salt, and pepper. Mix well to combine all ingredients and continue cooking for another 5 minutes until everything is heated through and flavors meld together.
