Ground Turkey Sweet Potato Skillet

Ingredients
  

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small onion, finely chopped

3 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

2 cups baby spinach

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Heat the Olive Oil: In a large skillet, heat 2 tablespoons of olive oil over medium heat.

    Cook the Sweet Potatoes: Add the diced sweet potatoes to the skillet and season with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until they start to soften and caramelize.

      Add Aromatics: Add the chopped onion, red bell pepper, and minced garlic to the skillet. Continue to sauté for an additional 5 minutes, or until the onion is translucent and the bell pepper is tender.

        Brown the Ground Turkey: Push the vegetables to one side of the skillet and add the ground turkey to the other side. Cook, breaking it apart with a spatula, until it’s browned, about 5-7 minutes.

          Season: Once the turkey is fully cooked, stir in the smoked paprika, cumin, and chili powder. Combine everything in the skillet and cook for another 2-3 minutes to allow the flavors to meld.

            Add Spinach: Fold in the baby spinach and cook until just wilted, about 2 minutes.

              Taste and Adjust: Taste the mixture and adjust seasoning with more salt and pepper if needed.

                Serve: Remove the skillet from heat. Garnish with fresh cilantro and serve with lime wedges on the side for a fresh kick.
