Ingredients

1 lb ground turkey

2 tablespoons olive oil

1 bell pepper, sliced (any color)

1 cup snap peas

1 cup broccoli florets

3 green onions, chopped

2 cloves garlic, minced

1 tablespoon ginger, freshly grated

1/4 cup soy sauce (or tamari for gluten-free)

1/4 cup teriyaki sauce

2 teaspoons cornstarch mixed with 2 tablespoons water (slurry)

Salt and pepper to taste

Sesame seeds for garnish

Cooked rice or quinoa for serving

Instructions

Prepare Ingredients: Gather and prepare all your ingredients. Slice the bell pepper, wash and trim the snap peas, and cut the broccoli into small florets. Chop the green onions and mince the garlic.

Cook Ground Turkey: In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat. Add the ground turkey into the skillet. Season with a pinch of salt and pepper, cooking until browned and fully cooked, about 5-7 minutes. Break it up with a spatula as it cooks.

Add Vegetables: Once the turkey is cooked through, add minced garlic, grated ginger, broccoli florets, snap peas, and sliced bell pepper to the skillet. Stir-fry the mixture for about 3-5 minutes, until the vegetables are tender but still crisp.

Make the Sauce: Pour in the soy sauce and teriyaki sauce, stirring to combine with the turkey and veggies. Bring the mixture to a gentle simmer.

Thicken the Sauce: Add the cornstarch slurry to the pan while continuing to stir, allowing the sauce to thicken slightly. Cook for an additional 1-2 minutes, ensuring everything is well-coated.

Finish and Serve: Remove from heat, sprinkle with chopped green onions and sesame seeds for garnish. Serve the stir fry over cooked rice or quinoa for a hearty meal.
