Ingredients

8 Hawaiian sweet rolls

4 large eggs

1 cup milk (whole or coconut milk)

1 tablespoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

2 tablespoons brown sugar

1 tablespoon unsalted butter (for cooking)

Fresh pineapple slices (for topping)

Maple syrup (for serving)

Powdered sugar (optional, for serving)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, nutmeg, and brown sugar until well combined.

Slice the Rolls: Carefully slice each Hawaiian sweet roll in half to create a top and bottom. You can leave them connected for a fun presentation.

Soak the Rolls: Dip each roll half into the egg mixture, making sure to coat both sides. Allow the rolls to soak for about 30 seconds on each side to absorb the batter.

Heat the Pan: In a large skillet or griddle, melt the butter over medium heat. Ensure the pan is evenly coated with butter for a non-stick surface.

Cook the Rolls: Place the soaked Hawaiian roll halves on the skillet, cut side down. Cook for 3-4 minutes or until golden brown and slightly crispy. Flip and cook the other side for another 2-3 minutes until golden.

Prepare the Toppings: While the rolls are cooking, grill fresh pineapple slices for about 2 minutes on each side until they are caramelized and have nice grill marks (optional).

Serve: Stack the French toast on plates, topping each serving with grilled pineapple slices. Drizzle with maple syrup and sprinkle powdered sugar if desired. Garnish with fresh mint leaves for an extra tropical flair.

Enjoy: Serve warm and enjoy the delightful combination of sweet rolls and tropical flavors!
