Hawaiian Shoyu Chicken

Ingredients
  

4 bone-in, skin-on chicken thighs

1 cup soy sauce (preferably shoyu)

1/2 cup brown sugar

1/2 cup pineapple juice

4 cloves garlic, minced

1 inch fresh ginger, grated

3 green onions, chopped (white and green parts separated)

1 tablespoon sesame oil

1 tablespoon rice vinegar

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for kicks)

Sesame seeds, for garnish

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, combine the soy sauce, brown sugar, pineapple juice, minced garlic, grated ginger, sesame oil, rice vinegar, black pepper, and red pepper flakes. Stir until the sugar dissolves completely. Add the chicken thighs, making sure they are well coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight for more depth of flavor.

      Preheat the Oven:

        Preheat your oven to 375°F (190°C).

          Sear the Chicken:

            In a large oven-proof skillet, heat over medium-high heat. Remove the chicken from the marinade (reserving the marinade) and place the thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the chicken thighs over and sear for an additional 3 minutes on the bone-side.

              Bake the Chicken:

                Pour the reserved marinade over the seared chicken thighs. Sprinkle the white parts of the chopped green onions over the top. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                  Glaze and Serve:

                    In the last 5 minutes of baking, you can increase the oven temperature to broil to caramelize the sauce further. Once done, remove from the oven, and let the chicken rest for a few minutes. Meanwhile, you can strain the sauce into a saucepan, bring it to a simmer, and let it reduce to thicken if desired.

                      Plate the Dish:

                        Serve the chicken thighs on a platter, drizzling with the thickened sauce. Garnish with toasted sesame seeds and the green tops of the green onions for a fresh touch. Pair it with fluffy white rice or a bed of steamed vegetables to soak up the delicious sauce.
