Ingredients

1 lb ground beef

4 medium potatoes, thinly sliced

1 medium onion, chopped

2 cups frozen mixed vegetables (corn, peas, and carrots)

1 can (10.5 oz) cream of mushroom soup

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Instructions

Preheat the oven: Preheat your oven to 375°F (190°C).

Cook the beef: In a large skillet over medium heat, add olive oil. Once hot, add the ground beef and chopped onions. Cook until the beef is browned and the onions are translucent. Drain excess fat if necessary.

Season: Stir in the garlic powder, paprika, salt, and pepper. Cook for an additional minute to combine flavors.

Mix ingredients: In a large mixing bowl, combine the cooked beef and onions with the sliced potatoes, frozen mixed vegetables, and cream of mushroom soup. Mix well until everything is evenly coated.

Layer in baking dish: Lightly grease a 9x13 inch baking dish. Pour the mixture into the dish, spreading it evenly.

Add cheese: Sprinkle the shredded cheddar cheese on top of the potato mixture.

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

Serve: Let it cool for a few minutes before serving. Enjoy your hearty Hobo Casserole!
