Honey Lime Chicken & Avocado Rice Stack

2 boneless, skinless chicken breasts

1/4 cup honey

2 tablespoons fresh lime juice

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cooked jasmine rice

1 ripe avocado, diced

1 tablespoon olive oil

1/2 teaspoon lime zest

Fresh cilantro leaves for garnish

Sesame seeds for garnish

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, whisk together honey, lime juice, soy sauce, garlic powder, onion powder, salt, and black pepper. Add chicken breasts and coat well. Cover and marinate for at least 30 minutes, or ideally, up to 2 hours in the fridge.

    Prepare the Avocado Rice: In a medium bowl, mix cooked jasmine rice with diced avocado, olive oil, lime zest, and a pinch of salt. Gently fold to combine, being careful to keep some avocado chunks intact.

      Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove chicken from marinade and discard the excess marinade. Cook the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown. Remove from heat and let rest for 5 minutes.

        Assemble the Stack: On a serving plate, create a stack with a layer of the avocado rice, then top it with sliced, grilled honey lime chicken. Repeat for additional servings, if necessary.
