1 cup all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1/2 cup mini marshmallows

1/2 cup chocolate chips

1/4 cup crushed graham crackers

Extra marshmallows and chocolate for topping

Instructions
 

In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk together to blend dry ingredients.

    In another bowl, whisk together the milk, egg, and melted butter until well combined.

      Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix—the batter should be slightly lumpy.

        Fold in the mini marshmallows, chocolate chips, and crushed graham crackers, mixing gently.

          Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

            Pour 1/4 cup of batter onto the griddle for each pancake. Cook for about 2-3 minutes, or until bubbles start to form on the surface. Flip and cook for an additional 2-3 minutes until golden brown.
