Ingredients

2 cups apple cider

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsweetened applesauce

1/4 cup vegetable oil

2 large eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 cup melted butter (for coating)

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions

Reduce the Cider: In a medium saucepan, bring the apple cider to a boil over medium heat. Reduce the heat and simmer until it's reduced to about 1 cup, which should take around 15-20 minutes. Let it cool to room temperature.

Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with cooking spray.

Mix Wet Ingredients: In a large bowl, whisk together the granulated sugar, brown sugar, applesauce, vegetable oil, eggs, vanilla extract, and the cooled apple cider reduction until smooth.

Combine Dry Ingredients: In another bowl, mix together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix.

Fill the Pan: Using a piping bag or a small scoop, fill each cavity of the donut pan about 2/3 full with the batter, ensuring they have enough space to puff up while baking.

Bake Donuts: Bake in the preheated oven for 12-15 minutes, or until the donuts spring back when lightly pressed and a toothpick inserted comes out clean.

Coat the Donuts: Allow the donuts to cool for 5 minutes in the pan before transferring them to a wire rack. While they’re still warm, brush each donut with melted butter and then roll them in a mixture of sugar and ground cinnamon to coat them thoroughly.

Serve: Let the coated donuts cool for a few more minutes before serving. Enjoy your delicious apple cider donuts with a hot cup of coffee or a glass of milk!
