Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup apple cider

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined. Set aside.

Combine Wet Ingredients: In a large mixing bowl, combine the apple cider, granulated sugar, brown sugar, egg, melted butter, and vanilla extract. Whisk until the mixture is smooth and the sugars are dissolved.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Fill Donut Pan: Transfer the batter to a piping bag or a ziplock bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about halfway.

Bake: Bake in the preheated oven for 10-12 minutes, or until the donuts spring back when lightly touched and a toothpick inserted into the center comes out clean.

Cool and Coat: Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack. While they are still warm, mix the granulated sugar and cinnamon in a shallow bowl. Roll each donut in the mixture to coat.

Serve: Enjoy your delightful apple cider donuts warm or at room temperature. They are perfect with coffee or as a sweet treat any time of day!
