For the dough:

4 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

½ cup warm milk (110°F)

¼ cup granulated sugar

½ cup unsalted butter, melted

2 large eggs

1 tsp salt

½ tsp cinnamon

For the filling:

2 cups apples, peeled and finely chopped (such as Granny Smith)

½ cup brown sugar

1 tsp cinnamon

¼ cup chopped walnuts (optional)

2 tbsp unsalted butter, softened

For the cream cheese frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

2 tbsp milk (as needed for consistency)

Instructions
 

Make the Dough: In a small bowl, combine the warm milk, yeast, and half of the sugar. Let it sit for about 5-10 minutes until frothy. In a large mixing bowl, mix the flour, remaining sugar, and salt. Add the melted butter, eggs, and the yeast mixture. Mix until a dough forms.

    Knead the Dough: On a floured surface, knead the dough for about 6-8 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.

      Prepare the Filling: In a medium bowl, combine the chopped apples, brown sugar, cinnamon, and walnuts (if using). Set aside.

        Roll Out the Dough: After the dough has risen, punch it down and roll it into a rectangle about ¼ inch thick. Spread the softened butter over the dough, and then evenly sprinkle the apple mixture across the surface.

          Form the Rolls: Starting from the long edge, roll the dough tightly into a log. Pinch the seams to seal. Cut the log into 12 equal pieces and place them in a greased 9x13 inch baking dish.

            Second Rise: Cover the rolls with a clean towel and let them rise for another 30-45 minutes until puffy.

              Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown.

                Make the Cream Cheese Frosting: In a large bowl, blend the cream cheese and softened butter until smooth. Gradually add the powdered sugar and vanilla extract. If the frosting is too thick, add a little milk, one tablespoon at a time until desired consistency is achieved.

                  Frost and Serve: Once the cinnamon rolls are out of the oven, let them cool for about 10 minutes before generously frosting them with the cream cheese frosting. Serve warm and enjoy!
