2 cups unsweetened almond milk (or any milk of your choice)

2 large apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1/4 cup maple syrup or honey (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

2 tablespoons chia seeds or ground flaxseed (optional for added nutrition)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish with cooking spray or coconut oil.

    In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, ground cinnamon, nutmeg, and salt. Stir until well combined.

      Fold in the diced apples, and if using, add the chopped nuts, raisins or cranberries, and chia seeds or flaxseed.

        Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
