1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

1 tsp ground cinnamon

¼ tsp salt

½ cup unsalted butter, softened

1 cup brown sugar, packed

1 large egg

1 tsp vanilla extract

¾ cup Greek yogurt (or sour cream)

1 ½ cups peeled and diced apples (preferably Granny Smith or Honeycrisp)

½ cup walnuts or pecans, chopped (optional)

2 tbsp granulated sugar (for topping)

1 tsp ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with cooking spray.

    Mix Dry Ingredients: In a mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

      Cream Butter and Sugar: In another large bowl, beat the softened butter and brown sugar together until light and fluffy, about 3-4 minutes.

        Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture, beating until combined.

          Incorporate Yogurt: Stir in the Greek yogurt (or sour cream) until smooth.
