8 oz linguine or fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 small onion, diced

1 red bell pepper, sliced

1 cup coconut milk

1 tbsp jerk seasoning (adjust to taste)

1 cup cherry tomatoes, halved

1 cup spinach leaves

1/2 cup grated Parmesan cheese

2 tbsp fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Lime wedges (for serving)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or fettuccine and cook according to package directions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add diced onion and minced garlic, sautéing for about 2 minutes until fragrant. Stir in sliced red bell pepper and cook for another 3-4 minutes until softened.

      Prepare Shrimp: Push the vegetables to the side of the skillet and add the shrimp. Sprinkle jerk seasoning, salt, and pepper. Cook for about 3-4 minutes until shrimp turn pink and opaque.

        Create the Sauce: Pour in the coconut milk, stirring to combine. Bring the mixture to a gentle simmer, then add cherry tomatoes and spinach. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes soften.
