For the Meatballs:

1 lb ground beef (or ground pork)

1/2 cup breadcrumbs (panko preferred)

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 tablespoon brown sugar

1 teaspoon salt

1/2 teaspoon black pepper

1 large egg

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tablespoons gochujang

1 tablespoon lime juice

1 teaspoon sesame oil

1 teaspoon honey

1/2 teaspoon garlic powder

1 tablespoon water (adjust for consistency)

Optional: sliced green onions for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Mix Meatball Ingredients: In a large mixing bowl, combine ground beef, breadcrumbs, green onions, minced garlic, grated ginger, soy sauce, gochujang, sesame oil, brown sugar, salt, pepper, and egg. Mix until well combined, but be careful not to overmix.

      Form Meatballs: Using your hands, shape the mixture into meatballs, approximately 1-2 inches in diameter. Place the meatballs on the prepared baking sheet, ensuring they are evenly spaced.

        Bake the Meatballs: Bake the meatballs in the preheated oven for about 20-25 minutes, or until they are cooked through and have a nice golden color.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a medium bowl, whisk together mayonnaise, gochujang, lime juice, sesame oil, honey, garlic powder, and water. Adjust the water to achieve your desired consistency—thicker for dipping or thinner for drizzling.

            Serve: Once the meatballs are done, remove them from the oven and let them cool slightly. Serve the meatballs hot with the spicy mayo dip on the side. Garnish with additional sliced green onions, if desired.
