Ingredients

1 lb ground beef (80/20 for flavor)

3 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 teaspoon gochujang (Korean chili paste)

2 green onions, chopped (plus extra for garnish)

1/2 cup shredded carrots

1 cup cooked white rice (jasmine or sticky)

Sesame seeds for garnish

Optional: steamed broccoli and/or spinach for serving

Instructions

Prepare the Sauce: In a bowl, mix together the soy sauce, brown sugar, sesame oil, and gochujang until well combined. Set aside.

Cook the Beef: In a large skillet over medium-high heat, add the ground beef. Cook until browned, stirring occasionally, about 5–7 minutes. Drain excess fat if necessary.

Add Aromatics: To the skillet, add the minced garlic and ginger. Sauté for 1-2 minutes until fragrant, making sure not to burn the garlic.

Combine with Sauce: Pour the sauce mixture over the cooked beef. Stir until the beef is well-coated and simmer on low for another 3-4 minutes to allow the flavors to meld.

Add Veggies: Mix in the shredded carrots and chopped green onions. Cook for an additional 2 minutes until the carrots are slightly tender.

Serve: In a bowl, place a generous scoop of cooked rice as the base. Top with the Korean ground beef mixture. Garnish with sesame seeds and extra green onions. Optionally, add steamed broccoli or spinach on the side.
