Lemon Garlic Shrimp Pasta With Spinach

Ingredients
  

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

2 tbsp olive oil

1 tbsp unsalted butter

Zest and juice of 1 large lemon

1 cup fresh spinach, chopped

½ cup cherry tomatoes, halved

¼ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for kick)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add spaghetti or linguine and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining, then set pasta aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, add olive oil and butter. Once the butter is melted and bubbling, add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

      Add the Shrimp: Add the shrimp to the skillet in a single layer. Season with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes on each side until shrimp turn pink and are opaque. Remove the shrimp from the skillet and set aside.

        Build the Sauce: In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they begin to soften. Stir in the lemon zest and juice, followed by the chopped spinach. Cook just until the spinach wilts.

          Combine: Return the shrimp to the skillet and add the drained pasta. Toss everything together, adding reserved pasta water as needed to help combine. The sauce should be light and able to coat the pasta.

            Finish & Serve: Remove from heat and stir in the grated Parmesan cheese. Taste and adjust seasoning if necessary. Serve the pasta hot, garnished with fresh parsley and a sprinkle of additional Parmesan cheese.
