Ingredients

4 boneless, skinless chicken breasts

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup all-purpose flour

1 cup breadcrumbs (preferably Italian seasoned)

1 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (like oregano and basil)

2 large eggs

2 tablespoons olive oil

1 tablespoon unsalted butter

Fresh parsley for garnish (optional)

Instructions

Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or overnight for best results.

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease the sheet with cooking spray.

Prepare the Breading Station: In one shallow bowl, add the flour. In another bowl, beat the eggs. In a third bowl, mix the breadcrumbs, grated Parmesan cheese, and dried Italian herbs together.

Bread the Chicken: Remove the marinated chicken from the buttermilk. Let the excess drip off, then dredge each breast in the flour, shaking off any excess. Next, dip it in the beaten eggs, allowing any extra to fall off. Finally, coat the chicken in the breadcrumb mixture, pressing gently to ensure it sticks well.

Sear the Chicken: In a large skillet, heat the olive oil and butter over medium-high heat. Once hot, add the breaded chicken breasts to the skillet. Sear for about 4-5 minutes on each side, or until golden brown.

Bake the Chicken: Transfer the seared chicken to the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.

Serve: Once done, let the chicken rest for 5 minutes. Garnish with fresh parsley if desired and serve hot. Enjoy your homemade Longhorn Parmesan Crusted Chicken with your favorite sides!
