Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup sun-dried tomatoes (packed in oil), chopped

1 cup heavy cream

1 cup chicken broth

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

8 oz. fettuccine pasta

½ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions

Prepare Chicken: Season the chicken breasts with salt and pepper on both sides.

Sear Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through. Remove from the skillet and let rest before slicing.

Make Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add chopped sun-dried tomatoes and cook for another 2 minutes.

Creamy Goodness: Pour in the heavy cream and chicken broth, stirring well to combine. Add basil, oregano, and red pepper flakes (if using). Let the sauce simmer on low heat for about 5-7 minutes until it thickens slightly.

Cook Pasta: Meanwhile, in a separate pot, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

Combine: Add the cooked pasta to the skillet with the sauce, tossing to coat. Stir in grated Parmesan cheese until melted and well combined.

Serve: Slice the chicken and lay it atop the creamy pasta. Garnish with fresh basil leaves and additional Parmesan if desired. Enjoy the dish with a side salad or garlic bread!
