Ingredients
  

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup sun-dried tomatoes, chopped

1 cup spinach (fresh or frozen)

300g (10 oz) fettuccine or your favorite pasta

Fresh basil, for garnish

Instructions
 

Prepare the Pasta: In a large pot, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Cook the Chicken: Season the chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 6-7 minutes per side or until golden brown and cooked through. Remove from the skillet and let it rest for a few minutes before slicing into strips.

      Create the Sauce: In the same skillet, lower the heat and add minced garlic and Italian seasoning. Sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer.

        Add Cream and Cheese: Stir in the heavy cream, and let it simmer for an additional 3-4 minutes, allowing it to thicken slightly. Gradually whisk in the Parmesan cheese until melted and smooth.

          Combine Ingredients: Add in the sun-dried tomatoes and spinach to the sauce, cooking for another 2-3 minutes until the spinach is wilted. If the sauce becomes too thick, add reserved pasta water as needed until desired consistency is reached.
