Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon ginger, minced

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

2 tablespoons soy sauce

1 teaspoon red pepper flakes (optional)

3 green onions, sliced

2 packs of ramen noodles (discard the seasoning packets)

1 cup baby spinach

Fresh basil, for garnish

Instructions

Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove from the skillet and let them rest before slicing.

Prepare the Sauce: In the same skillet, add minced garlic and ginger, sautéing for about 1 minute until fragrant. Add sun-dried tomatoes and cook for another minute.

Make the Creamy Base: Pour in the heavy cream and chicken broth, stirring to combine. Add soy sauce and red pepper flakes if using. Let the mixture simmer for about 5-7 minutes until it thickens slightly.

Cook the Ramen Noodles: While the sauce is simmering, bring a separate pot of water to boil. Add ramen noodles and cook according to package instructions (usually 3-4 minutes). Drain and set aside.

Combine Ingredients: Once the sauce has thickened, add sliced chicken back into the skillet along with the cooked ramen noodles and baby spinach. Toss everything together and cook until the spinach wilts, about 2 minutes.

Serve and Garnish: Divide the ramen into bowls, garnishing with sliced green onions and fresh basil.

Enjoy Your Meal: Get ready for a delicious and romantic meal that might just make someone say I do!
