Mediterranean Chicken Pasta Salad

Ingredients
  

2 cups rotini or penne pasta

1 pound boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse with cold water to cool. Set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, garlic powder, and oregano. Heat a tablespoon of olive oil in a grill pan or skillet over medium heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and let it rest for 5 minutes before slicing it into bite-sized pieces.

      Mix the Salad: In a large mixing bowl, combine the cooked pasta, sliced chicken, cherry tomatoes, cucumber, red onion, black olives, feta cheese, and fresh parsley.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Adjust seasoning to taste.

          Combine Everything: Pour the dressing over the pasta salad and gently toss to combine all ingredients evenly. Make sure the pasta and veggies are well coated in the dressing.
