Ingredients
  

1 can (20 oz) crushed pineapple, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup crushed graham crackers

1/2 cup unsweetened coconut flakes (toasted, if desired)

Fresh pineapple chunks and mint leaves for garnish

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer on medium speed until smooth and creamy.

    In a separate bowl, whip the heavy cream until stiff peaks form.

      Gently fold the whipped cream into the cream cheese mixture until well combined.

        Stir in the drained crushed pineapple until evenly distributed throughout the mixture.

          In a 9x9-inch dish, spread half of the crushed graham crackers evenly on the bottom.

            Spoon half of the pineapple cream mixture over the graham crackers, spreading it evenly.

              Repeat with the remaining graham crackers and the rest of the pineapple cream mixture, ending with a layer of the cream.

                Top with toasted coconut flakes for a delightful crunch.

                  Cover and refrigerate for at least 4 hours, or overnight for best results to allow the flavors to meld.
