1 lb (450g) boneless, skinless chicken thighs

1 cup jasmine rice, rinsed

2 cups chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 cup BBQ sauce (your choice)

1/4 cup honey

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup corn (fresh or frozen)

1 red bell pepper, chopped

1 tablespoon olive oil

Fresh cilantro for garnish (optional)

Prepare the Chicken: In a bowl, combine the chicken thighs, BBQ sauce, honey, smoked paprika, salt, and pepper. Let marinate for at least 15 minutes while you prepare the other ingredients.

    Sauté Aromatics: In a large skillet or a deep pan, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

      Brown the Chicken: Push the onions to the side of the skillet and add the marinated chicken thighs. Cook on each side for about 4-5 minutes, until they are nicely browned (they will finish cooking with the rice).

        Combine Ingredients: Stir in the rinsed jasmine rice, chicken broth, corn, and chopped bell pepper. Ensure the rice is evenly distributed around the chicken.

          Cook: Bring to a gentle boil, then reduce heat to low. Cover the skillet with a lid and let it cook for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.
