One Skillet Salmon with Lemon Orzo

Ingredients
  

4 salmon fillets (skin-on or skinless)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: 1/2 cup spinach or arugula for added greens

Instructions
 

Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Cook the Orzo: Add the orzo to the skillet, stirring to coat it with the onion and garlic mixture. Pour in the vegetable or chicken broth and bring to a boil. Reduce the heat to a simmer and cover. Cook for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid, stirring occasionally.

      Prepare the Salmon: While the orzo is cooking, season the salmon fillets with salt, pepper, and dried oregano.

        Cook the Salmon: In a separate pan or using the same skillet if there is enough space, heat a little olive oil over medium-high heat. Add the salmon fillets, skin-side down if applicable, and cook for 4-5 minutes on one side, until crisp and golden. Carefully flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

          Combine with Orzo: Once the orzo is cooked, stir in the cherry tomatoes, lemon juice, lemon zest, and optional greens. Mix well and let it heat through for a couple of minutes.

            Serve: Plate the lemon orzo mixture and top with the cooked salmon fillets. Garnish with fresh parsley and additional lemon wedges if desired.
