Ingredients

1 lb young carrots (preferably rainbow carrots for color)

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easier cleanup.

Prepare Carrots: Wash and peel the carrots. Cut them into fry shapes, about 1/4 to 1/2 inch thick, to ensure they cook evenly.

Season Carrots: In a large bowl, combine the carrot fries with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss until the carrots are well-coated.

Add Parmesan: Sprinkle the grated Parmesan cheese over the seasoned carrot fries. Toss gently to coat evenly, ensuring the cheese adheres to the carrots.

Spread on Baking Sheet: Arrange the seasoned carrot fries in a single layer on the prepared baking sheet, ensuring they have enough space to roast rather than steam.

Roast: Bake in the preheated oven for 20-25 minutes, turning halfway through. Roast until they are tender and golden brown, watching closely to prevent burning.

Garnish and Serve: Remove from the oven and let cool slightly. Garnish with freshly chopped parsley if desired. Serve warm as a delightful side dish or snack.
