Ingredients

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 inch ginger, grated

1 tablespoon garam masala

1 tablespoon ground coriander

1 teaspoon ground cumin

1 teaspoon turmeric powder

1 can (14 oz) crushed tomatoes

1 cup heavy cream

2 tablespoons butter

Salt, to taste

Fresh cilantro, for garnish (optional)

Instructions

Marinate the Chicken: In a bowl, combine chicken pieces with half of the garam masala, cumin, coriander, turmeric, and a pinch of salt. Let it marinate for at least 15 minutes while you prepare the sauce.

Cook the Chicken: Heat oil in a large skillet over medium heat. Add the marinated chicken and cook until golden brown, about 5-7 minutes. Remove and set aside.

Sauté Aromatics: In the same skillet, add onions and cook until translucent, about 3-4 minutes. Add garlic and ginger, sauté for another 1-2 minutes until fragrant.

Make the Sauce: Stir in the remaining spices. Add the crushed tomatoes and simmer for about 5 minutes until the sauce thickens slightly.

Add Cream and Chicken: Lower the heat, then pour in the heavy cream and add the cooked chicken back into the skillet. Stir to combine and let it simmer for another 5-10 minutes until the chicken is cooked through and coated with the creamy sauce.

Finish: Stir in the butter until melted. Taste and adjust seasoning as needed.

Serve: Garnish with fresh cilantro if desired. Serve hot over basmati rice or with naan.
