Roasted Red Pepper & Mozzarella Stuffed Chicken

4 boneless, skinless chicken breasts

1 cup roasted red peppers, chopped

1 cup fresh mozzarella cheese, shredded

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon balsamic vinegar (optional)

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a medium bowl, combine the roasted red peppers, fresh mozzarella cheese, chopped basil, minced garlic, dried oregano, salt, and black pepper. Mix until well combined.

      Place the chicken breasts on a clean cutting board. Carefully slice a pocket into the side of each chicken breast, making sure not to cut all the way through.

        Stuff each chicken breast with the roasted red pepper and mozzarella mixture, dividing it evenly among the four breasts. Secure the openings with toothpicks if necessary.

          In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 4-5 minutes on each side, until golden brown.

            Once browned, sprinkle the grated Parmesan cheese on top of each stuffed chicken breast. Drizzle with balsamic vinegar if using.

              Transfer the skillet to the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

                Remove the skillet from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh basil leaves.
