Ingredients

1 pound sirloin steak, cut into 1-inch cubes

3 tablespoons fresh rosemary, finely chopped

4 garlic cloves, minced

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1 bell pepper (any color), cut into 1-inch chunks

1 red onion, cut into 1-inch chunks

Wooden or metal skewers

Instructions

Marinate the Steak: In a large bowl, mix the chopped rosemary, minced garlic, olive oil, balsamic vinegar, salt, and black pepper. Add the steak cubes and toss to coat well. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for maximum flavor).

Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. If using metal skewers, preheat your grill or oven broiler.

Assemble the Kebabs: After marination, take the steak from the refrigerator. Thread the steak pieces onto the skewers, alternating with chunks of bell pepper and red onion for added color and flavor.

Grill the Kebabs: Preheat your grill to medium-high heat. Place the kebabs on the grill and cook for about 8-10 minutes, turning occasionally until the steak reaches your desired doneness (135°F for medium-rare, 145°F for medium).

Serve: Once cooked, remove the kebabs from the grill and let them rest for a few minutes. Serve warm with your favorite dipping sauces or over a bed of rice.
