2 cups cooked jasmine rice (preferably day-old)

1 lb chicken thighs, boneless and skinless, diced

1/4 cup soy sauce

2 tablespoons mirin

1 tablespoon sake (optional)

2 tablespoons vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup mixed vegetables (carrots, peas, and corn)

3 green onions, chopped

2 eggs, lightly beaten

1 tablespoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Pickled ginger (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken with soy sauce, mirin, and sake. Let it marinate for at least 15 minutes.

    Prepare the Fried Rice Base: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the onions and garlic, sautéing until fragrant and translucent, about 2-3 minutes.

      Cook the Chicken: Add the marinated chicken to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes. Ensure it’s well-coated in the sauce.

        Add Mixed Vegetables: Stir in the mixed vegetables and cook for another 2-3 minutes until they are heated through.
