Sheet Pan Sausage and Veggies

1 pound Italian sausage (sweet or spicy, your choice)

2 cups Brussels sprouts, halved

2 cups baby potatoes, quartered

1 bell pepper, sliced (red, yellow, or green)

1 red onion, sliced

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for a spicy kick

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sausage: If using links, slice the Italian sausage into bite-sized pieces. This allows for even cooking and better flavor distribution throughout the dish.

      Chop the Vegetables: In a large bowl, combine the halved Brussels sprouts, quartered baby potatoes, sliced bell pepper, and sliced red onion.
