Instructions

Prepare the Shrimp:

    - In a bowl, combine the olive oil, minced garlic, smoked paprika, cayenne pepper, salt, black pepper, and lime juice. Add the shrimp and toss to coat. Let marinate for about 15-20 minutes.

      Make the Mango Salsa:

        - In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to allow flavors to meld.

          Prepare the Lime-Chili Sauce:

            - In another bowl, whisk together the Greek yogurt, lime juice, chili powder, honey (if using), and salt. Adjust seasoning to taste and set aside.

              Cook the Shrimp:

                - In a large skillet over medium-high heat, cook the marinated shrimp for about 2-3 minutes per side, or until they are pink and opaque. Remove from heat.

                  Prepare the Avocado:

                    - In a small bowl, toss the diced avocados with lime juice and a pinch of salt to prevent browning.

                      Assemble the Bowls:

                        - If using, start with a base of cooked rice or quinoa in each bowl. Top with the shrimp, diced avocado, and a generous scoop of mango salsa. Drizzle the lime-chili sauce over the top.

                          Serve:

                            - Garnish with lime wedges and additional cilantro, if desired. Enjoy your delicious Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce!
