Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

For the Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

Juice of 1 lime

For the Avocado Bowl:

2 cups cooked quinoa (or rice)

2 ripe avocados, diced

1 cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

Fresh cilantro, for garnish

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño pepper, finely chopped (optional)

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup Greek yogurt (or sour cream)

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt to taste

Prepare the Shrimp: In a bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, pepper, and lime juice. Add the shrimp and toss to coat. Let marinate for about 15 minutes.

    Make the Mango Salsa: In a medium bowl, mix together the diced mango, red bell pepper, red onion, jalapeño (if using), lime juice, and salt. Set aside to let the flavors meld.

      Prepare the Lime-Chili Sauce: In a small bowl, whisk together Greek yogurt, lime juice, chili powder, garlic powder, and salt until smooth. Adjust seasoning to taste and set aside.

        Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes per side or until opaque and cooked through. Remove from heat.
