2 ripe bananas, mashed

1 cup all-purpose flour

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup milk (or plant-based milk)

1 large egg

1 teaspoon vanilla extract

1/4 cup chopped walnuts or pecans (optional)

Oil for frying (canola or coconut)

Powdered sugar for dusting

Instructions
 

In a mixing bowl, combine the mashed bananas, sugar, milk, egg, and vanilla extract. Mix until well blended.

    In another bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

      Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; a few lumps are okay. If using, stir in the chopped nuts.

        Heat about 1/4 inch of oil in a skillet over medium heat until it's hot but not smoking.

          Drop spoonfuls of the batter into the hot oil, frying a few fritters at a time. Once they start bubbling and turning golden (about 2-3 minutes), flip them over and cook the other side for an additional 2-3 minutes.

            Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.

              Once drained, dust them with powdered sugar and serve warm with a drizzle of honey or maple syrup.
