1 lb ground beef (or turkey for a lighter option)

2 medium sweet potatoes, peeled and diced

1 bell pepper (red or green), diced

1 small onion, diced

2 garlic cloves, minced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Avocado, diced (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Sweet Potatoes: Heat a large skillet over medium heat and add olive oil. Once hot, add the diced sweet potatoes. Season with salt and pepper. Sauté for about 5-7 minutes, stirring occasionally until they begin to soften.
