4 boneless, skinless chicken thighs

1 can (13.5 oz) coconut milk

2 tablespoons coconut oil

1 medium onion, finely chopped

4 cloves garlic, minced

2 red chili peppers, finely chopped (adjust to taste)

1 tablespoon fresh ginger, grated

1 tablespoon lime juice

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Marinate the Chicken: In a bowl, combine the chicken thighs with coconut milk, lime juice, ginger, cumin, smoked paprika, salt, and pepper. Cover and marinate for at least 30 minutes in the refrigerator for richer flavor.
