Spicy Honey-Lime Chicken

1.5 lbs boneless, skinless chicken thighs

1/4 cup honey

1/4 cup fresh lime juice

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions
 

In a medium bowl, whisk together honey, lime juice, olive oil, minced garlic, red pepper flakes, cumin, smoked paprika, salt, and pepper until well combined.

    Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is thoroughly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, preferably 2 hours for more flavor.

      Preheat your grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.

        Remove the chicken from the marinade, letting excess drip off. Discard the remaining marinade.

          Grill the chicken thighs for about 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred.

            Once cooked, remove the chicken from the grill and let it rest for 5 minutes.

              Slice the chicken and arrange it on a serving platter. Garnish with chopped cilantro and serve with lime wedges on the side.
