Spicy Jalapeno Chicken

4 boneless chicken breasts

2 tablespoons olive oil

3 fresh jalapenos, finely chopped (remove seeds for less heat)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon salt

½ teaspoon black pepper

Juice of 1 lime

½ cup shredded cheddar cheese (optional)

Fresh cilantro, chopped (for garnish)

Instructions
 

Start by marinating the chicken breasts. In a medium bowl, combine the olive oil, chopped jalapenos, garlic powder, onion powder, smoked paprika, cumin, salt, pepper, and lime juice. Mix well to create a marinade.

    Add the chicken breasts to the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for a more intense flavor).

      Preheat your grill or skillet over medium-high heat.

        Once hot, remove the chicken from the marinade and let the excess drip off. If using a grill, place the chicken directly on the grate. If using a skillet, add a little more olive oil to the pan.

          Grill the chicken for about 6-8 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

            If you like your chicken cheesy, sprinkle shredded cheddar cheese on top during the last minute of cooking, and close the grill lid or cover the skillet until the cheese melts.

              Remove the chicken from the grill/skillet and let it rest for 5 minutes before slicing.

                Garnish with fresh chopped cilantro, and serve with your choice of sides such as rice, grilled vegetables, or a fresh salad. Enjoy!
