Spicy Jalapeno Chicken

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil

2 jalapenos, finely chopped (seeds removed for less heat)

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Juice of 1 lime

1/4 cup fresh cilantro, chopped

1/2 cup shredded cheese (cheddar or pepper jack)

Sliced avocado and lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, chopped jalapenos, minced garlic, smoked paprika, ground cumin, chili powder, salt, pepper, and lime juice. Add the chicken breasts and coat them well with the marinade. Marinate for at least 30 minutes or up to 2 hours in the refrigerator for best flavor.

    Cook the Chicken: Preheat a grill or a skillet over medium-high heat. Remove the chicken from the marinade and place it on the grill or skillet. Cook for approximately 6-7 minutes on each side, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).

      Add Cheese: During the last couple of minutes of cooking, sprinkle shredded cheese over the chicken and cover the grill or skillet to melt the cheese.

        Garnish: Once cooked, transfer the chicken to a cutting board and let it rest for a few minutes. Slice the chicken and sprinkle fresh cilantro on top.
