Spinach and Feta Quesadillas (20 minutes)

Try these delicious Spinach and Feta Quesadillas for a quick and healthy meal! Loaded with fresh spinach, crumbled feta, and gooey mozzarella, they're perfect for lunch or dinner. With a crispy tortilla exterior and a flavorful filling, these quesadillas are easy to make in just 20 minutes. Serve them warm with a dollop of sour cream or Greek yogurt and fresh herbs for a tasty touch. A delightful way to enjoy greens, everyone will love them!

Ingredients
  

2 cups fresh spinach, chopped

1 cup feta cheese, crumbled

1 cup mozzarella cheese, shredded

4 large flour tortillas

1 tablespoon olive oil

2 cloves garlic, minced

Salt and pepper, to taste

Optional: ½ teaspoon crushed red pepper flakes (for heat)

Optional: Sour cream or Greek yogurt for serving

Optional: Fresh herbs (like parsley or dill) for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add the chopped spinach to the skillet and cook until it wilts down, about 2-3 minutes. Season with salt, pepper, and crushed red pepper flakes if desired. Remove from heat.

      In a bowl, combine the wilted spinach with feta cheese and mozzarella. Mix well until combined.

        Wipe the skillet clean and return it to medium heat.

          Place a tortilla in the skillet and evenly spread a generous portion of the spinach and cheese mixture on one half of the tortilla.

            Fold the tortilla over to create a half-moon shape. Press gently to seal.

              Cook for about 3-4 minutes on one side, until golden brown and crispy. Flip carefully and cook for another 3-4 minutes on the other side, until the cheese is melted and the tortilla is crispy.

                Repeat the process with the remaining tortillas and filling.

                  Slice the quesadillas into wedges and serve warm with sour cream or Greek yogurt and a sprinkle of fresh herbs if desired.
