Strawberry Peach Crisp

_For the filling:_

2 cups fresh strawberries, hulled and halved

2 cups ripe peaches, pitted and sliced

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 teaspoon ground cinnamon

_For the crisp topping:_

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup chopped nuts (almonds or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Fruit Filling: In a large mixing bowl, combine the halved strawberries and sliced peaches. Add the granulated sugar, lemon juice, vanilla extract, cornstarch, and ground cinnamon. Toss gently to coat the fruit evenly. Transfer the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

      Make the Crisp Topping: In a separate bowl, mix the rolled oats, flour, brown sugar, baking powder, and salt together. Pour in the melted butter and stir until the mixture is crumbly. If you’re using nuts, fold them in at this stage.

        Assemble the Crisp: Evenly distribute the crispy topping over the fruit filling in the baking dish.

          Bake: Place the baking dish into the preheated oven and bake for 35-40 minutes or until the topping is golden brown and the fruit is bubbling.

            Cool and Serve: Once done, allow the crisp to cool for about 10 minutes before serving. It’s delicious on its own or served warm with a scoop of vanilla ice cream.
