The combination of sumac, balsamic vinegar, and honey gives them a unique tang that’s hard to resist. With a quick prep time of 10 minutes and a total of 40 minutes to marinate, these onions are a delicious way to brighten up your dishes!

2 large red onions, thinly sliced

2 tablespoons sumac

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon chopped fresh parsley (for garnish)

1 teaspoon honey (optional for sweetness)

Instructions
 

Begin by peeling and thinly slicing the red onions. You can use a mandoline for even slices if available.

    In a large mixing bowl, combine the sliced onions with the salt and let them sit for about 10 minutes. This helps to soften the onions and extract some moisture.

      After 10 minutes, rinse the onions under cold water to remove excess salt, then drain and pat them dry with a paper towel.

        In a separate bowl, whisk together the olive oil, balsamic vinegar, sumac, black pepper, and honey (if using) until well combined.

          Add the drained onions to the bowl with the dressing and toss until the onions are evenly coated.

            Allow the onions to marinate for at least 30 minutes at room temperature. This will enhance the flavor, but you can also refrigerate them for longer if desired.

              Before serving, give the onions a final toss and garnish with chopped fresh parsley.
