Ingredients

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or plain yogurt mixed with milk)

1/4 cup melted butter (plus more for cooking)

1 large egg

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips (optional)

Whipped cream and fresh berries for topping (optional)

Instructions

Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until well mixed.

Mix Wet Ingredients: In a separate bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract until combined.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; some lumps are okay. If using, fold in the chocolate chips.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly brush it with melted butter.

Cook the Pancakes: Pour about 1/4 cup of pancake batter onto the hot skillet for each pancake. Cook until bubbles begin to form on the surface, and the edges look set (about 2-3 minutes), then flip and cook for another 1-2 minutes on the other side until fluffy and cooked through.

Serve: Stack the pancakes on a plate and top with whipped cream, fresh berries, and a drizzle of chocolate syrup if desired.

Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 4 (makes about 8 pancakes)
