8 oz (225 g) penne pasta

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves, fresh

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

¼ teaspoon red pepper flakes (optional)

Fresh basil, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the chicken and cook for about 6-7 minutes on each side, until fully cooked and golden brown. Remove the chicken from the skillet, let it rest for a few minutes, then slice it into strips.

      Sauté Garlic and Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Toss in the halved cherry tomatoes and cook for 3-4 minutes until they start to soften. Add the fresh spinach and cook until wilted, about 2 minutes.

        Make the Sauce: Reduce the heat to low. Add the heavy cream to the skillet, stirring well to combine. Gradually stir in the grated Parmesan cheese until the sauce is smooth. Season with Italian seasoning, red pepper flakes, salt, and pepper to taste.

          Combine Pasta and Chicken: Add the cooked penne pasta and sliced chicken to the skillet. Toss to coat the pasta and chicken evenly in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

            Serve: Plate the Tuscan chicken pasta and garnish with fresh basil and additional Parmesan cheese if desired.
