Ingredients

2 pounds ground beef

1 cup Idaho potato, grated (about 2 medium potatoes)

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, crumbled

1/2 cup green onions, finely chopped

1/4 cup milk

1/2 cup breadcrumbs

2 large eggs

2 tablespoons Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup sour cream (for topping)

1/2 cup additional shredded cheddar cheese (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare Pan: Line a loaf pan with parchment paper or lightly grease it with cooking spray.

Mix Ingredients: In a large mixing bowl, combine the ground beef, grated potatoes, shredded cheddar cheese, crumbled bacon, green onions, milk, breadcrumbs, eggs, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Use your hands to gently mix everything until just combined. Be careful not to overmix as this can result in a dense meatloaf.

Shape the Loaf: Transfer the meat mixture into the prepared loaf pan, pressing it down evenly.

Bake the Meatloaf: Place the loaf pan in the preheated oven and bake for 1 hour, or until the meatloaf reaches an internal temperature of 160°F (70°C).

Add Toppings: In the last 10 minutes of baking, remove the loaf from the oven, spread the sour cream over the top, and sprinkle the additional shredded cheddar cheese on top. Return to the oven to melt the cheese and heat through.

Rest and Serve: Once fully cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This helps the juices redistribute, making it juicier. Serve with extra green onions sprinkled on top if desired.
